Tyler Smith’s Pumpkin Spice BBQ Ribs

Ingredients

  • RIBS:
  • 1 rack pork baby back ribs
  • 6 to 8 tablespoons barbecue rub
  • 4 to 6 tablespoons pumpkin pie spice
  • PUMPKIN SPICE BARBEQUE SAUCE:
  • 2 cups ketchup
  • 1 cup canned pumpkin
  • 1/2 cup cider vinegar
  • 1/2 cup packed brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons pumpkin pie spice
  • Optional: Toasted sesame seeds and sliced green onions

Directions

  1. Prepare grill for indirect medium heat (about 325°). If necessary, remove thin membrane from ribs and discard. Slice into individual ribs.
  2. In a small bowl, combine barbecue rub and pumpkin pie spice; rub over ribs until well coated. Grill, covered, over indirect medium heat, 1-1/2 to 2 hours.
  3. Meanwhile, in a saucepot, combine sauce ingredients until smooth. Cook over medium-high heat until mixture comes to a boil. Reduce heat to a simmer; cook until thickened, 10-15 minutes. Reserve 1/2 cup sauce for finishing.
  4. Brush remaining sauce over ribs, covering well. Cook until tender and browned, about 1 hour longer.
  5. Remove from heat. Brush with remaining sauce; let stand 15 minutes before serving. If desired, garnish with sesame seeds and sliced green onion.
