This hamburger casserole recipe is such a hit it's traveled all over the country! My mother originated the recipe in Pennsylvania, I brought it to Texas when I married, I'm still making it in California, and my daughter treats her friends to this oldie in Colorado.   • To keep parsley fresh for up to a month, trim the stems and place the bunch in a tumbler with an inch of water. Be sure no leaves are in the water. Tie a produce bag around the tumbler to trap humidity; store in the refrigerator. Each time you use the parsley, change the water and turn the produce bag inside out so any moisture that has built up inside the bag can escape.
  • Using lean ground beef instead of beef that’s 80% lean saves 45 calories per 4-ounce serving of beef. Lean ground beef is also 29% lower in saturated fat.

    Ingredients

    • 2 pounds lean ground beef (90% lean)
    • 4 pounds potatoes, peeled and sliced 1/4 inch thick
    • 1 large onion, sliced
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 1 teaspoon beef bouillon granules
    • 1 cup boiling water
    • 1 can (28 ounces) diced tomatoes, undrained
    • Minced fresh parsley, optional

    Directions

    1. In a Dutch oven, layer half each of the meat, potatoes and onion. Sprinkle with half each of the salt and pepper. Repeat layers. Dissolve bouillon in the boiling water; pour over all. Top with tomatoes. Cover and cook over medium heat until potatoes are tender, 45-50 minutes. If desired, garnish with parsley.
