Gabrielle Dillon’s Taco Ranch Phyllo Cups
Ingredients
- 1 pound ground beef
- 1 package taco seasoning
- 1/2 cup water
- 3/4 cup ranch dressing
- 1/2 medium lime, juiced
- 2 to 3 packages frozen miniature phyllo tart shells, baked
- 1 cup shredded pepper jack cheese
- Optional: Chopped green onions, diced tomatoes, sliced jalapenos, fresh minced cilantro
Directions
- Preheat oven to 350°. In a large skillet, cook beef over medium heat 6-8 minutes or until beef is no longer pink, breaking meat into crumbles; drain. Stir in taco seasoning and water; heat through.
- In a small bowl, combine ranch and lime juice until blended; set aside.
- Place phyllo cups onto a baking sheet. Fill with taco meat; sprinkle with cheese. Bake until cheese is melted, 5-7 minutes.
- Drizzle with lime ranch. Garnish as desired with green onions, tomatoes, jalapenos and cilantro.
