Crispy Delicata Squash Rings

These simple-to-prep crispy delicata squash rings are a delicious way to celebrate the flavors of fall.

Ingredients

  • 2 small delicata squash (about 1-1/2 pounds), seeded, sliced in 1/2-in. rounds
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 1/3 cup freshly grated Parmesan cheese

Directions

  1. Preheat the oven to 425°. Line a baking sheet with parchment paper.
  2. Place squash rings in a large bowl. Add olive oil; toss to coat. Sprinkle with Italian seasoning, salt, garlic powder, onion powder, pepper and crushed red pepper flakes; toss to coat.
  3. Place squash rings in a single layer on the prepared baking sheet. Generously sprinkle each squash ring with Parmesan cheese. Roast 25-30 minutes or until golden brown and tender.
