Cookie Dough-Stuffed Dates

Yield 12 stuffed dates
When you need a sweet treat, these cookie dough-stuffed dates are a tasty, naturally sweetened, healthy-ish snack.

Ingredients

  • 12 Medjool dates, pitted
  • 3/4 cup almond flour
  • 2 tablespoons almond butter
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons miniature semisweet chocolate chips
  • Flaky sea salt, for garnish

Directions

  1. Slice dates lengthwise to create a small pouch.
  2. In a small bowl, stir together almond flour, almond butter, maple syrup, vanilla extract and salt until a soft dough forms; fold in chocolate chips. Spoon a generous teaspoon of dough into each date.
  3. Refrigerate 10 minutes. Garnish with flaky sea salt just before serving.
