Boursin Mashed Potatoes

Boursin mashed potatoes are a creamy and flavorful thanks to the garlic and herb cheese.

Ingredients

  • 4 large russet potatoes (about 2-1/2 pounds), peeled and chopped into 2-in. cubes
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup 2% milk, warmed
  • 1 package (5.2 ounces) Boursin garlic and fine herbs cheese
  • Salt and pepper to taste
  • 1 teaspoon minced chives, for garnish

Directions

  1. Place potatoes in a large pot; add water to cover. Bring to a boil. Reduce heat to medium; cook, uncovered, until very tender, 15-20 minutes. Drain; return the potatoes to the pot. Add butter; mash the potatoes to desired consistency. Fold in warmed milk and Boursin cheese. Season with salt and pepper.
  2. Transfer to a serving dish; garnish with minced chives to serve.
