This blueberry puppy chow has all the sweet chocolate-peanut butter taste of the old-fashioned recipe with the addition of juicy, fruity blueberry bliss.
Ingredients
- 1/3 cup semisweet chocolate chips
- 2 tablespoons creamy peanut butter
- 1 teaspoon coconut oil
- 1-1/2 cups fresh blueberries
- 1/2 cup confectioners' sugar
Directions
- Combine chocolate chips, peanut butter and coconut oil in the top of a double boiler over gently simmering water. Cook until melted and smooth, stirring constantly.
- Place blueberries in a large bowl; pour melted chocolate mixture on top. Gently fold until evenly coated; rest 1-2 minutes. Add confectioners’ sugar; toss to coat.
- Transfer to a parchment-lined sheet pan in an even layer. Separate berries that are stuck together. Chill 10-15 minutes to set the chocolate. Store in an airtight container; keep refrigerated.
